Oatmeal Raisin Breakfast Bites! (Recipe)

Many of you have been asking about the recipe for my oatmeal raisin breakfast bites. I figure this is a good time to write my first recipe blog -- fighting the urge to fill it with life stories and pop-up ads. So, here it is, the no B.S. recipe -- Which I created when I was in my early twenties on a late Sunday evening after originally wanting to make muffins for the week ahead...kidding -- but if you're interested in knowing more about my oatmeal raisin bite story, you can click here.
Ingredients - What You'll Need
Recipe makes 24 bites / fills 2 muffin trays
4 2/3 cups of Oats (37.3 oz)
3 Tbsp Butter
Cinnamon
3/4 cup PB Fit - powdered peanut butter (6 oz)
4 Eggs (large)
2.5 - 3 cups Almond Milk (unsweet) - or Milk/Milk Substitute (20 - 24 oz)
Raisins (10 -12 oz) - (you can substitute for other dried fruit like cherries, blueberries, pineapple, or cranberries.)
Cooking Spray
Instructions
1. Preheat oven to 425 degrees (by the time it preheats you will be close to ready to bake.)
2. In a large mixing bowl you will add in the 4 2/3 cups of Oats (37.3 oz) plus 3 Tbsp Butter. (I prefer old fashion oats over quick/instant oats.)

3. Microwave the ingredients in the bowl for 1 minute then incorporate butter so it coats the oats evenly.
4. Next add Cinnamon to taste (light dusting top of oats.)


5. Mix in 3/4 cup PB Fit - powdered peanut butter (6 oz)
6. Mix together thoroughly
7. Followed by 4 Eggs (large)

8. Next 2.5 - 3 cups Almond Milk - or Milk/Milk Substitute (20 - 24 oz)
9. Incorporate all ingredients until batter like consistency
10. Add Raisins (10 -12 oz)

11. Using Cooking Spray, lightly coat each muffin section
12. Fill each so the batter is at the top or just below the muffin surface line
13. Bake for 14-16 minutes

And there you have it -- 24 ready to go bites!
Each one contains roughly 140 Cal., 5.5g Protein, 21g Carbs, 4.3g Fat

Oatmeal Raisin Bites - The Beginning
If you're like me, you hate doing dishes every meal, but like to eat healthy homemade meals. I wanted to stay away from the pre-packaged breakfast bars, because they are full of added refined sugar and preservatives, plus just a small box usually costs more than the ingredients here. When I decided to make these I was aiming for something that could be made in bulk, frozen for convenience, and maintained its same taste/texture when thawed out.
I have never been much of a baker, but I had just gotten muffin trays -- eager to make some muffins -- I realized that I didn't have flour, baking soda, sugar, or any muffin ingredients... so naturally, instead of making a quick trip to the store, I just "wing it," what some might call being "resourceful."
With the limited ingredients I had at the time, the result was the oatmeal bites as they were more compact than muffins (easy to freeze and store,) and more nutritious than oatmeal cookies. Overall, a better grab and go option for your busy mornings!
